Truffle season is in this New Year's in Dubai
Nicknamed the "diamond of the kitchen", Eataly's Truffle section gives fine food lovers an insight into delectable treats.

Eataly, the popular authentic Italian restaurant and marketplace located on the ground floor of Dubai Mall launches the UAE's first 'truffle restaurant' dedicated to discovering the Umbrian white truffle, which comes into season in November.
In celebration of the truffle, often called the 'diamond of the kitchen', a series of Michelin-star chef masterclasses were also held as part of the Italian Cuisine World Summit 2015. The chefs prepared a selection of truffle dishes over a period of three days, with guests welcomed to sample and learn more about the flavour and cooking techniques of the truffle.
Partnering with Urbani Tartufi, one of the most prestigious truffle distributors in the world, Eataly's permanent Truffle Restaurant aims to bring the best selection of white truffles to fine food lovers in Dubai.
Chef Hadi El Awar of Eataly commented: "Truffle season is upon us and we are very excited to have Eataly's new permanent Truffle Restaurant in celebration of this beautiful ingredient."
Special truffle dishes available from Eataly's Truffle Restaurant menu include Uova In Camicia Al Tartufo Bianco - Italian organic poached eggs on a bed of homemade rustic bread and fontina, cream topped with shaved truffles; Pizza Al Tartufo Bianco - fresh white asparagus, mozzarella cheese, parmigiano reggiano and organic egg topped with shaved truffles; Tagliolini Al Tartufo Bianco E Pane Croccante - fresh egg tagliolini served with sage sauce and aromatic breadcrumbs, topped with shaved truffles; and Risotto Al Tartufo Bianco - gallo risotto served with parmigiano salsa and shaved white truffles.
As part of the Italian Cuisine World Summit 2015 celebrations across Dubai, Eataly chefs took part in a series of competitions in celebration of Italy's favourite dishes. Competitions included The Best Italian Pizza in the UAE attended and won by Chef Vincenzo LaVecchia, The Pasta Premier League attended by Chef Mario Don Navarette, and The Risotto Contest by Chef Davide Gardini.
The 7th Italian Cuisine World Summit was held under the patronage of the Italian Embassy of in Abu Dhabi, the Italian Consulate in Dubai and the Italian Chamber of Commerce in the UAE. The summit featured 20 events held at over 30 venues from October 27 - November 5.
